This simplest of puff pastry tarts can be made with just about any fresh fruit, from finely sliced bananas to peaches, nectarines or apples.

Ingredients

Quantity Ingredient
200g Puff pastry
8 fresh figs
icing sugar

Method

  1. Roll out the pastry to a large rectangle about 3 mm thick. Cut out 4 x 12 cm circles, and lift them onto a baking sheet lined with a silicone baking mat or baking paper. Rest in the refrigerator for 1 hour.
  2. Preheat your oven to 180°C. Finely slice the figs and arrange them in overlapping circles on top of the pastry. Dust with plenty of icing sugar. Bake for 15–20 minutes until the pastry is puffed up and golden brown.
