As the name suggests, this sort of salad is simplicity itself, and can be varied with the seasons or according to your taste. Experiment with different combinations of leaves and fresh herbs. Play around with the dressings too, although simple salads usually need nothing more than a simple dressing. I particularly like lemon vinaigrette, herb vinaigrette and walnut vinaigrette.

Ingredients

Quantity Ingredient
3 cups mixed salad leaves
1 cup fresh herbs (parsley, chives, basil, mint, chervil or fennel fronds)
60ml Lemon vinaigrette
salt
pepper

Method

  1. Tear the larger leaves into smaller pieces and place in a mixing bowl with the herbs. Pour in just enough vinaigrette to moisten the leaves – you don’t want to drown them. Season and use your fingers to tumble everything together gently. You need to ensure that all the leaves are evenly and lightly coated, but above all you don’t want to bruise the delicate leaves.
