Ingredients

Quantity Ingredient
1/2 onion
1/2 bay leaf
3 cloves
20ml vegetable oil
200ml milk
6 slices thick white bread, cut into large squares
100ml cream
pinch nutmeg
salt
pepper

Method

  1. Divide the onion in half and dice one piece to a fine brunoise. Fix the bay leaf to the other piece of onion with the 3 cloves and set it to one side.
  2. Heat the oil in a small saucepan and sweat the onion brunoise until soft and translucent. Add the milk to the pan with the onion and bring to the boil. Remove the pan from the heat, cover and leave to infuse for 30 minutes.
  3. Add the remaining ingredients to the infused milk and stir well. Heat gently to a simmer and keep warm until ready to serve. Remove half onion, with bay leaf and cloves, before serving. This sauce will only keep for 1–2 hours.
