This French brasserie classic is zesty and full of strong flavours. Feel free to taste and adjust the balance according to your preference.

Ingredients

Quantity Ingredient
200g unsalted butter, softened
2 tablespoons shallots, finely chopped
1 tablespoon garlic, finely chopped
2 tablespoons parsley, finely chopped
1 tablespoon tarragon, finely chopped
4 anchovy fillets, very finely diced
2 tablespoons brandy
1 tablespoon worcestershire sauce
1 lemon
few drops tabasco, to taste
1/2 teaspoon salt
pinch freshly ground black pepper

Method

  1. Put all the ingredients in a large mixing bowl. Using a wooden spoon, mix well to combine.
  2. Roll the butter in baking paper to a sausage shape, twist the ends securely and chill until required. The butter will keep in a sealed container in the refrigerator for 2 weeks or up to 3 months in the freezer.
