Ingredients

Quantity Ingredient
200ml Stock syrup
120g liquid glucose
30g fresh ginger, grated
150ml ginger beer
lime juice, to taste

Method

  1. Place the syrup, glucose and grated ginger in a heavy-based saucepan and heat to a gentle simmer. Remove from the heat and set aside to infuse for 3 hours.
  2. Strain the infused syrup and stir in the ginger beer and lime juice to taste. Tip into an ice-cream machine and churn according to the manufacturer’s instructions. Transfer to a plastic container and freeze for up to 3 days.
