Ingredients

Quantity Ingredient
350ml milk
50g liquid glucose
2 vanilla pods, seeds scraped
100ml Stock syrup
lemon juice, to taste

Method

  1. Put the milk, glucose and vanilla in a heavy-based saucepan and bring to a gentle simmer. Remove from the heat and set aside to infuse for 10 minutes. When the milk is cold, stir in the stock syrup and lemon juice to taste. Tip into an ice-cream machine and churn according to the manufacturer’s instructions. Transfer to a plastic container and freeze for up to 5 days.
