Method

  1. This consommé is made in exactly the same way as game consommé, except we replace the game trimmings with trimmings from white fish, lobster or scallops. Use lobster bisque instead of game stock and omit the Madeira.
  2. It will keep in a sealed container in the refrigerator for 2 days or up to 2 months in the freezer.
