Ingredients

Quantity Ingredient
4 x 150g snapper fillets
50ml olive oil
pepper
few drops lemon juice
salt

Method

  1. Arrange a steamer or double boiler over a moderate heat. Skin the snapper fillets if you like, but this is not essential. Brush each with olive oil, season and sprinkle on the lemon juice.
  2. Cut 4 squares of baking paper and arrange a snapper fillet on each. Place in the steamer, one at a time, and cook, covered, for 8 minutes. The snapper is cooked when tender, just giving way if you gently prod the flesh with a knife. It should still be transparent in the middle. Keep warm while you steam the remaining fillets.
