Ingredients

Quantity Ingredient
250g fresh ripe berries of your choice
50ml Stock syrup

Method

  1. Put the raw berries and syrup in a blender in batches and blitz to a smooth purée. Alternatively, combine in a saucepan and bring to the boil before blending. Pass through a fine sieve and serve straight away. If serving cold, transfer to an airtight container and refrigerate.
  2. The berry coulis will keep in a sealed container in the freezer for up to 3 months.
