Ingredients

Quantity Ingredient
200g ripe stone fruit of your choice
50ml Stock syrup
50ml fruit-flavoured liqueur
or 50ml sweet wine

Method

  1. Peel the fruit and remove the stones. Chop roughly and place in a saucepan with the sugar and liqueur or sweet wine. Bring to the boil and then blend. Pass through a fine sieve and serve straight away. If serving cold, transfer to an airtight container and refrigerate. The stone fruit coulis will keep in a sealed container in the freezer for up to 3 months.
