Ingredients

Quantity Ingredient
50ml olive oil
1 spanish onion, finely diced
2 asian eggplants, finely diced
1 yellow zucchini, finely diced
1 green zucchini, finely diced
1 red capsicum, finely diced
salt
pepper

Method

  1. Heat the oil in a frying pan over a moderate heat. Add the diced vegetables, season well and sauté for 2 minutes until tender. Serve straight away or tip into a sealed container and store in the refrigerator for up to 2 days.
