These are like an apple and berry pie, except in ball form. Not only does their colour look nice with the acai powder in there, but the acai also gives them a little antioxidant boost. And it’s always good to have a bit of an antioxidant boost, I reckon.

Ingredients

Quantity Ingredient
150g walnut halves
or sunflower seeds
7 medjool dates, pitted, about 140 g
40g cashew butter
or seed butter
2 tablespoons acai powder
2 teaspoons beetroot powder, optional
1 teasponn ground cinnamon
200g dried apple
1 teaspoon vanilla extract
or 1/2 teaspoon vanilla powder

Method

  1. Place all the ingredients in your food processor or blender and pulse everything together until combined.
  2. Take about a tablespoon of the mixture at a time and roll it into 2.5 cm balls. Place the balls in an airtight container then refrigerate or freeze. These will keep for up to 2 weeks in the fridge, and a couple of months in the freezer.
