A simple, delicious and fresh-tasting snack to have while you’re on the go, these little grain-free bites will keep your brain fuelled and those sweet cravings satisfied. Think of this no-guilt treat as a chocolate mint slice replacement, or if you’re old-school, an after dinner mint replacement.

Ingredients

Quantity Ingredient
150g walnut hallves
8 medjool dates, pitted, about 160 g
40g almond butter
30g raw cacao powder
1 teaspoon vanilla extract
or 1/2 teaspoon vanilla powder
3 drops peppermint essential oil
or 1 teaspoon peppermint essence, to taste

Method

  1. Place all the ingredients in your food processor or blender and pulse until combined well.
  2. Take about a tablespoon of the mixture at a time and roll it into 2.5 cm balls. Place the balls in an airtight container then refrigerate or freeze them. These will keep for up to 2 weeks in the fridge, and a couple of months in the freezer.
