Sometimes, my morning coffee just isn’t enough, no matter how many cups I have. These balls provide the perfect mid-morning kick to keep me going throughout the day and – bonus! – they’re filled with healthy fats and are naturally sweetened. A few of these make a mighty fine stand-in for a regular afternoon coffee/biscuit combo.

Ingredients

Quantity Ingredient
2 tablespoons finely ground coffee
115g raw or activated cashew nuts
50g walnut halves
40g cashew butter
40ml maple syrup
1 teaspoon vanilla extract
or 1/2 teaspoons vanilla powder
5 medjool dates, pitted, about 100 g
75g golden or brown linseed meal
1 1/2 tablespoons raw cacao powder, for rolling

Method

  1. Place all the ingredients in your food processor or blender and pulse until the mixture comes together to form a ball.
  2. Take about a tablespoon of the mixture at a time and roll it into 2.5 cm balls. Dust each ball in raw cacao powder then place them in an airtight container. These will keep for up to 2 weeks in the fridge, and a couple of months in the freezer.
