WHITE BEAN, BROCCOLI & QUINOA PATTIES

This is a simple pattie recipe, but a good one. Bursting with lemony flavour and full of protein, these are a great savoury snack to include in your work or school lunchbox. When served with salad, or in a wrap, these are totally the bomb. They’re also good with hummus, or any other delish dip you happen to love and have around.

Ingredients

gluten-free breadcrumbs, for coating
2 1/2 tablespoons coconut oil
or grapeseed oil, for frying

PATTIES

100g quinoa
1 400 g tin cannellini beans, drained and rinsed
200g broccolli, steamed, cooled and roughly chopped
1/4 red onion, roughly chopped
2 1/2 tablespoons nutritional yeast flakes
finely grated zest of 1 lemon
2 1/2 tablespoons lemon juice
2 tablespoons linseed meal
1 tablespoon finely chopped mint
1 tablespoon finely chopped flat-leaf parsley
sea salt and freshy ground black pepper, to taste
1 teaspoon dried chilli flakes, optional

Method

  1. For the patties, place the quinoa in a sieve then rinse under cold water until it runs clear. Place it in a saucepan with 250 ml water and bring it to the boil over medium heat. Cover the pan and cook for 20 minutes or until the water has been absorbed. Set aside to cool.
  2. Place the beans, broccoli and onion in your food processor or blender then pulse until combined.
  3. Transfer the mixture to a mixing bowl with the quinoa and remaining ingredients. Set aside for 20 minutes; this allows the linseed meal to bind everything together.
  4. Take about 60 g of the mixture at a time and form them into patties about 5 cm across. Toss the patties into the breadcrumbs to lightly coat them.
  5. Heat the oil in a large frying pan over medium heat. Add the patties, in batches if necessary, and cook for 3–4 minutes on each side or until golden. Enjoy straight away or cool and store in an airtight container in the fridge for up to 3 days, for little savoury snacks!
