Stop, drop, blitz ’em up, roll ’em up... that’s how (coconut) rough riders roll. An ode to DMX, the original rough rider, these balls are stupidly good. Try them for yourself and then you’ll believe me. These can be made nut-free by substituting the cashew butter with a seed butter; I like to use a creamy sunflower seed butter.

Ingredients

90g desiccated coconut
2 tablespoons raw cacoa powder
1 tablespoon coconut butter
1 tablespoon raw cashew butter
1 tablespoon raw honey
2 tablespoons lucuma powder
6 medjool dates, pitted, about 120 g

Method

  1. Preheat the oven to 180°C. Spread the coconut on a tray and toast it for 5 minutes or so – just until it starts to turn a little golden. Cool it to room temperature then put it, with the rest of the ingredients, into your food processor or blender and pulse together until combined.
  2. Take about a tablespoon of the mixture at a time and roll it into 2.5 cm balls. Place these in a single layer in an airtight container then refrigerate or freeze them. These will keep for up to 2 weeks in the fridge, and a couple of months in the freezer.
