If ever I went on a date, and my date made me these, I would be completely over the moon. The quickest, easiest dessert to whip up, these are SO pretty and taste SO good! Sometimes it’s the simplest things that really are the best.

Ingredients

Quantity Ingredient
12 medjool dates, about 240 g
60g crunbchy peanut butter
100g raw dark chocolate, melted and cooled
sea salt flakes or coconut ‘bacon’

Method

  1. Cut each date through the middle lengthways, using a small sharp knife. Take out the stones then gently butterfly each date out (which is a fancy way to say open each date up without tearing the ends – you want them to keep their shape). Fill each date with peanut butter then close the date around the peanut butter; it’s totally fine if you overfill them a bit and your dates hardly close. They’ll be even more delicious. Place them on a tray lined with baking paper then put them in the freezer for about 10 minutes or until firm.
  2. Remove your dates from the freezer and dip each one in the melted chocolate, allowing any excess chocolate to drain off. Sprinkle the dates with a little sea salt (or some coconut ‘bacon’), then put them back into the freezer for the chocolate to set.
  3. Enjoy them immediately, straight from the freezer. Or, leave them there, in an airtight container, until you’re ready to knock the socks off your loved one (or just treat yourself). They’ll keep for a few months in the freezer.
