I miss Maltesers on a daily basis. They were awesome. Before I knew I was a coeliac sufferer, they were my chocolate of choice. They’re crunchy, tasty and just the perfect size. Sigh. But here’s a good alternative I developed and, while maybe not the healthiest recipe in the book, these are a total treat when you need one.

Ingredients

Quantity Ingredient
80g macadamia nuts
or roasted almonds
80g roasted peanuts
100g cashew butter
2 1/2 tablespoons raw honey
2 tablespoons rice malt syrup
1 teaspoon vanilla extract
80g raw dark chocolate, melted and cooled

Method

  1. Place all the ingredients except the melted chocolate in your food processor or blender and pulse together until well combined.
  2. Line a small tray with baking paper. Taking about a tablespoon of the mixture at a time, roll the mixture into 1.5 cm balls. Dip each ball in the melted chocolate to coat, allowing any excess chocolate to drain off, then put them on the tray. Refrigerate until the chocolate has set then transfer balls to an airtight container. Store them in the fridge or the freezer; they’ll keep for up to 2 weeks in the fridge, and a couple of months in the freezer.
