There is not too much to say about these. Peanut butter. Chocolate. Salt. Have I sold you on them yet? If you like, you can sprinkle a few sea salt flakes onto each one after you’ve dipped them in chocolate – it makes them look even lovelier.

Ingredients

Quantity Ingredient
160g dry-roasted peanuts
100g crunchy peanut butter
90g raw honey
or maple syrup
or rice malt syrup
1 tablespoon maple syrup
1/2 teaspoon salt
100g raw dark chocolate, melted and cooled

Method

  1. Place all the ingredients, except the melted chocolate, in your food processor or blender and pulse together until everything is combined.
  2. Line a tray with baking paper. Take about a tablespoon of the mixture at a time and roll it into 1.5 cm balls. Dip each ball into the melted chocolate, allowing any excess to drain off. Refrigerate the balls until the chocolate has set then transfer them to an airtight container and store in the refrigerator or freezer. These will keep for up to 2 weeks in the fridge, and a couple of months in the freezer.
