Banoffee pie is just so inviting – it’s food porn at it’s best. Oozy caramel, soft banana and crunchy bits on top. Mmmmmmm. This sundae is a combination of all of those things and as soon as it’s made, you’ll totally want to smash your face into it. But I know you’ll restrain yourself and stay classy.

Ingredients

‘NICE’ CREAM

4 small bananas, frozen and peeled, about 440 g
125ml coconut cream, chilled
2 medjool dates, pitted, about 40 g
1 teaspoon vanilla extract
or 1/2 teaspoon vanilla powder
2 1/2 tablespoons maple syrup

PEANUT CARAMEL SAUCE

Quantity Ingredient
3 medjool dates, pitted, about 60 g
125g nut or seed butter
80ml coconut cream
2 1/2 tablespoons coconut oil
1 pinch sea salt flakes
60ml maple syrup
1 teaspoon vanilla extract

TOPPINGS

Quantity Ingredient
chopped bliss balls, chopped chocolate, activated buckwheat or coconut ‘bacon’, to taste

Method

  1. Place all the ‘nice’ cream ingredients into your food processor or blender. Process them until they’re completely smooth. Scoop the mixture into a container or bowl and place it in the freezer until it’s firm.
  2. To make the peanut caramel sauce, place all the ingredients into the cleaned food processor or blender and process until smooth.
  3. To assemble, layer scoops of the ‘nice’ cream and caramel sauce in chilled bowls or glasses. Sprinkle with the toppings of your choice and serve immediately. Everyone will love you.
