Lemon slice was always my faaaaaaaaavourite when I was little. The sweet–sour flavour of lemon combined with coconut is just one of the best things to eat, ever. This is a delicious raw version of the classic lemon slice, and it’s as easy to make as it is to eat!

Ingredients

BASE

155g activated raw cashews
or macadamia nuts
45g desiccated coconut
2 1/2 tablespoons ground almonds
1/2 teaspoon vanilla extract
or 1/4 teaspoon vanilla powder
2 tablespoons maple syrup
or coconut nectar
or rice malt syrup
finely grated zest of 1 lemon

ICING

Quantity Ingredient
155g activated raw cashews
2 1/2 tablespoons coconut butter
or coconut paste
1/2 teaspoon vanilla extract
60ml lemon juice
2 1/2 tablespoons coconut cream
2 1/2 tablespoons coconut nectar

Method

  1. For the base, place all the ingredients into your food processor or blender then pulse together until combined.
  2. Line the base of a 20 x 15 cm baking tin with baking paper. Transfer the mixture to the tin, pressing it firmly and evenly over the base, then freeze it for 30–60 minutes to firm.
  3. To make the icing, combine all the ingredients in the cleaned food processor and process until smooth. Remove the slice from the freezer and pour the icing over the base. Spread it so it covers evenly then return to the freezer for about 30–60 minutes to set.
  4. Once set, cut into 12 even-sized bars and store in an airtight container in the fridge or freezer. They’ll keep for a few days in the fridge, and up to 1 month in the freezer.
