TROPICAL GREEN SMOOTHIE

Often when I make a smoothie, I make enough for 2 or 3 serves at a time. I will then pour myself a glass and bottle the rest to take to work, or just put it in the fridge for those moments when I CBB (can’t be bothered) making something healthy, but totally know I should. This smoothie is super-hydrating and, with the pineapple, really good for your gut – just make sure you keep the core in there to get the full benefit. It goes perfectly with Berry red superpops, or a Fruit salad bliss bite.

Ingredients

Quantity Ingredient
370g pineapple flesh, chopped, including the core
2 kale leaves
2 1/2 tablespoons roughly chopped mint leaves
juice of 1 lemon, or to taste
125ml coconut water
1 tablespoon raw honey
or maple syrup
1/2 teaspoon matcha powder, optional
2 teaspoons lucuma powder, optional

Method

  1. Place all the ingredients into your blender and blend until smooth. Pour into two glasses and enjoy immediately.

NOTE

  • Add ice, or use frozen pineapple, for a thicker smoothie. If using frozen pineapple, add a bit more coconut water, as required, for blending.
