Raw chocolate is one of those things that can be madly expensive to buy, and is really quite easy to make at home. This is a very simple recipe and you can use it for any other recipe in this book that uses chocolate – or just eat it whenever you feel the need (no judgement here). You can substitute the cacao butter with coconut oil, but as soon as you pull the chocolate out of the fridge it will start to soften and it doesn’t really hold its shape as well when used in baking. So really, what I’m saying is, stick to the cacao butter.

Ingredients

175g cacao butter
90g agave syrup
or maple syrup
85g raw cacao powder
1 pinch sea salt flakes, plus extra for sprinkling
2 1/2 tablespoons coconut cream, optional

toppings of your choice

extra sea salt flakes, chopped nuts, chopped dried fruits, or seeds

Method

  1. Melt the cacao butter in a double boiler set over simmering water. Once it’s melted, whisk in the agave syrup then add the cacao, salt and coconut cream (if using). Whisk again until the mixture is smooth then remove from the heat and cool slightly. Line the base of a 20 x 15 cm tray with baking paper. Pour in the chocolate mixture then sprinkle with a little extra salt, or other topping of your choice.
  2. Place in the fridge or freezer for about 20 minutes to set then chop up and enjoy.
