Ingredients

375g raw or toasted sunflower seeds
maple syrup, to taste
pinch of salt

Method

  1. Place all the ingredients into your food processor or blender and process until smooth. Transfer into a sterilised jar (see page 11) and store in the fridge.

Note

  • For a nuttier tasting butter, use roasted sunflower seeds. Heat the oven to 180°C, spread the seeds thinly over a large baking tray and roast for 15–20 minutes or until they are light golden. Let them cool before blending.
