Corn fritters with avocado and ‘goat’s’ cheeses mash

I couldn’t not include these corn fritters in my cookbook, not only because they are a staple in my house and my mother’s absolute favourite, but because they are so simple and packed with goodness. You can even make these the night before and just heat them up in the morning, or you can cook them and eat one or two as a snack throughout a busy day.

Corn fritters

Ingredients

Quantity Ingredient
400g organic corn kernels
65g buckwheat flour
2 flax eggs
2 spring onions, chopped
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon flat-leaf parsley, chopped
60ml plant-based oil

Avocado and ‘goat’s’ cheese smash

Quantity Ingredient
1/2 avocado, stoned
30g Cashew ‘goat’s’ cheese
1/2 lemon, juiced
2-3 drops green jalapeno hot sauce
pinch salt

Method

  1. To make the fritters, place the corn, flour, flax eggs, spring onions, salt, pepper, parsley and 2 tablespoons of the oil in a bowl. Mix until combined.
  2. Put the remaining oil in a frying pan over medium heat. Spoon about 60 ml batter at a time into the pan and cook for 2–3 minutes, then flip and cook for another 2–3 minutes on the other side.
  3. For the smash, place the avocado, cashew ‘goat’s’ cheese, lemon juice, jalapeño hot sauce and salt in a bowl. Mash together with a fork.
  4. Serve the fritters immediately with the smash.
