This recipe is inspired by my trip to the United States and the huge array of breakfast toaster pastries that were available there. Having to restrain myself from the super-processed and sugar-packed treats, I decided there needed to be a healthier version and came up with this recipe that everyone and anyone can easily make at home. I cannot emphasise the praise I get when I make this recipe. It will turn any health food-wary person into a health food enthusiast!

Ingredients

260g buckwheat flour
45g coconut sugar
1/2 teaspoon salt
1/4 teaspoon baking powder
125g vegan butter
60ml plant-based milk
1 tablespoon flaxmeal
150g Chocolate hazelnut butter
125g Berry chia jam

Vanilla icing

Quantity Ingredient
2 tablespoons stevia
1 teaspoon cornflour
1 teaspoon vanilla extract
1 tablespoon maple syrup

Chocolate icing

Quantity Ingredient
2 tablespoons Chocolate hazelnut butter

Method

  1. In a food processor, combine the buckwheat flour, coconut sugar, salt and baking powder. Slowly add the vegan butter and then the plant-based milk, flaxmeal and 2 tablespoons water. Once a dough forms, remove it from the food processor, wrap in plastic wrap and place in the refrigerator for 2 hours.
  2. Remove half of the dough from the refrigerator, roll out on a well-floured surface and cut into desired shapes – I either use rectangles or circles. Place 1 tablespoon of either chocolate hazelnut butter or jam onto each cut-out.
  3. Preheat the oven to 180°C.
  4. Remove the second half of the dough from the refrigerator, roll out and cut into exactly the same shapes as before. Place the shapes on top of the others and press down the edges with a fork to seal. Prick the tops with a fork and then bake in the oven for 15 minutes until golden.
  5. For the vanilla icing, mix the stevia, cornflour, vanilla and maple syrup in a bowl. Drizzle over the pop tarts filled with raspberry jam.
  6. For the chocolate icing, gently heat the hazelnut butter in a double boiler until melted and then drizzle over the chocolate hazelnut-filled pop tarts.
  7. Enjoy immediately or store in an airtight container for up to a week.
