To say that I love this jam would be an understatement. Spread it on toast, dollop it onto yoghurt, eat it from the jar or use it in your cooking. This jam is packed with omega-3s thanks to the beautiful chia seeds, and it’s simply amazing to eat!

Ingredients

Quantity Ingredient
440g mixed berries
2-3 tablespoons stevia
1 lemon, juiced
1 tablespoon water
1 tablespoon rice malt syrup
1 teaspoon vanilla extract, (optional)
60g chia seeds

Method

  1. Place all the ingredients, except the chia seeds, in a small saucepan over medium heat and let simmer until the stevia has dissolved, about 2 minutes. Remove from the heat, add the chia seeds, stir and place in a sterilised jar.
  2. Place in the refrigerator to set overnight and enjoy! The jam keeps in the refrigerator for up to 3 weeks.
