Serving this on vegie burgers or just placing it on the table at a barbecue is now a must for me. This takes no time to make, is flavoursome, looks lovely and will make any relish critic happy!

Ingredients

Quantity Ingredient
1 red onion, thinly sliced
1 tablespoon plant-based oil
1 beetroot, grated
1 green apple, peeled and grated
1 teaspoon balsamic vinegar
1 tablespoon coconut sugar
1 tablespoon maple syrup
1/2 teaspoon salt

Method

  1. Sauté the onion in a frying pan over medium heat with the plant-based oil. Cook until the onion starts to become translucent then add the beetroot and apple. Cook for 5–10 minutes then add the vinegar, coconut sugar, maple syrup and salt.
  2. Once everything is combined and coming together, remove from the heat and place the mixture in a sterilised jar.
  3. Keep in the refrigerator for up to 2 weeks and enjoy.
