Roasted tomato relish is the perfect accompaniment to many dishes. Many store-bought relishes contain numerous preservatives, additives and are packed with white sugar. This relish is easy to make, is extremely tasty and will make you forget about regular ol’ tomato sauce!

Ingredients

Quantity Ingredient
300g cherry tomatoes
2 garlic cloves, crushed
2 tablespoons plant-based oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 brown onion, diced
1 teaspoon stevia

Method

  1. Preheat the oven to 180°C.
  2. In a small oven dish, place the tomatoes and garlic. Sprinkle on 1 tablespoon of the plant-based oil, salt and pepper then place in the oven for 30 minutes.
  3. While the tomatoes are slowly roasting, in a small frying pan over medium heat cook the onion in the remaining oil. Once translucent, add the stevia, turn off the heat and set aside. Once the tomatoes are roasted, place them in a bowl with the onion. Mix together (or blitz roughly with a handheld blender, if you like) and transfer to a sterilised jar. Allow to cool, close the lid and keep in the refrigerator for up to 1 week.
