I am definitely the kind of girl who always has a little bottle of hot sauce in her bag – I am addicted. This is a very simple hot sauce recipe that will last for months. It contains the perfect amount of spice and is super-easy to make. It’s also great to bottle up and give as a gift – who wouldn’t love a bottle of homemade hot sauce?

Ingredients

Quantity Ingredient
4 garlic cloves, peeled but left whole
20 chillies, (see note)
1 teaspoon aleppo pepper
1 teaspoon salt
1 tablespoon plant-based oil
1 brown onion, chopped
250ml white vinegar

Method

  1. Combine the garlic cloves, whole chillies, aleppo pepper, salt, oil and onion in a saucepan and cook for 5 minutes over medium heat. Add 500 ml water then reduce the heat and let simmer for 20–25 minutes until most of the liquid has evaporated. Remove the saucepan from the heat and allow to cool.
  2. Transfer the mixture to a food processor or blender. Blitz, gradually adding the vinegar. Taste and season with extra salt and pepper as desired.
  3. Strain and place in a sterilised jar or bottle.
  4. For best results, let the sauce age for roughly 1–2 weeks for maximum flavour. It will last for up to 6 months in the refrigerator.

Note:

  • Use chillies such as chipotle, jalapeño, bird’s eye or other chilli of your choice.
