I don’t know anyone who doesn’t love a gooey, warm chocolate pudding. There is nothing more satisfying than sticking your spoon into the pudding and seeing chocolate lava ooze onto the plate. This was not an easy recipe to master. Most chocolate molten puddings are either 95 per cent chocolate and butter and contain half a dozen eggs, but this recipe is so different in its ingredients, yet just as gorgeous (if not more so). Nobody will believe this is high in antioxidants and good for you, but I assure you, it is!

Ingredients

4-6 teaspoons vegan butter, for greasing
175g grain-sweetened chocolate chips
2 tablespoons coconut oil
80ml plant-based milk
130g buckwheat flour
1 teaspoon baking powder
1/2 teaspoon salt
60g cacao powder, plus 1 tablespoon extra, for dusting
210g stevia
250ml soy milk
80-120ml coconut cream, to serve

Method

  1. Grease 4–6 ramekins with 1 teaspoon vegan butter.
  2. Place the ramekins on baking paper, and draw a circle around them. Cut out the shapes and press the paper into the bottom of each ramekin. Set aside.
  3. Put the chocolate chips, coconut oil and plant-based milk in a double boiler. Gently heat until the chocolate has melted. Stir until smooth, remove from the heat and set aside.
  4. Preheat the oven to 180°C.
  5. In another bowl, put the flour, baking powder, salt, cacao and stevia. Stir together. Add the soy milk and mix until combined. Gently fold in the chocolate mixture.
  6. Divide the mixture into the prepared ramekins and place on a baking tray. Bake in the oven for 5–10 minutes until the edges and top are just cooked – you still want the middle to be gooey as it will keep cooking once removed from the oven.
  7. When ready to serve, gently run a knife around the edge of the ramekins to loosen the puddings, then turn them out onto a plate and serve with coconut cream and a light dusting of cacao.
