After a hard day’s work, knowing you have a healthy, delicious dinner ahead of you makes everything seem easier, and it definitely helps lift dampened spirits. Dinner is a time of reflection and a time to reconnect with family and friends and to share food with each other.

I remember being so grateful and in awe of my mum when I was younger. She would get home after a long day at work and still find time to cook a beautiful meal for us. I didn’t realise then quite how talented and brilliant she was. I would always compliment her on the food as it blew my mind every time she cooked – how did she make food taste THAT good? My mum was never afraid to try something new. Today, she is still an absolute kitchen superhero in my eyes. She can turn the most random ingredients in the refrigerator into something spectacular – a skill that not many people have. She taught me what I know today. She passed on her skills and sat there and ate the food I made for her, even if it was terrible!

I first started cooking dinner when I was in high school as a way to make things easier for my mum who already did a million and one things for us. Many years on I still enjoy cooking dinner and, more importantly, I love sitting down to enjoy the meal, hearing stories, telling jokes and soaking up the good vibes of those around me.
