Fritters are such a great lunch and you can eat them on their own or with salad. These delicious broccoli fritters are simple, tasty and are filled with heaps of nutrients to keep you fuelled up until dinner.

1/2 head broccoli, chopped into very small pieces
65g buckwheat flour
2 tablespoons flaxmeal
80ml water
1/2 red onion, diced
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon savoury yeast flakes
90g Cashew ‘goat’s’ cheese
or 90g Macadamia ‘ricotta’ cheese
2 tablespoons plant-based oil
1 tablespoon flat-leaf parsley, chopped

To serve

lemon wedges
125g vegan yoghurt

Method

  1. Steam the broccoli for 2–3 minutes. Remove from the heat and set aside.
  2. In a bowl, mix the remaining ingredients, then add the broccoli. Form the mixture into palm-sized patties and place in a non-stick frying pan over medium heat and cook for 5 minutes on each side.
  3. Serve the fritters with the lemon wedges and yoghurt. Store in the refrigerator for up to 2 days.
