This salad is simple and delicious. It’s easy to make, contains heaps of nutrients to fuel you and has lots of different textures to ensure maximum satisfaction. The sweetness of the roasted pear goes perfectly with the slight tartness of the hibiscus vinegar and creates an amazing flavour sensation in your mouth.

Ingredients

2 pears
2 tablespoons rice malt syrup
3/4 teaspoon salt
1 teaspoon plant-based oil
400g tinned brown lentils
2 tablespoons pepitas
1 tablespoon sunflower seeds
80g mixed salad leaves
2 tablespoons orange juice
1 teaspoon hibiscus vinegar
1 tablespoon olive oil

Method

  1. Preheat the oven to 180°C.
  2. Slice the pears and place them in a bowl with the rice malt syrup, ¼ teaspoon of the salt and the plant-based oil. Toss everything together to coat the pears.
  3. Place the pears on a baking tray and bake in the oven for 15 minutes until nicely roasted.
  4. Drain and rinse the lentils and place them in a bowl with the pepitas, sunflower seeds, remaining salt and mixed salad leaves. Mix together and place in 2 to 4 serving bowls or plates. Top with the roasted pears.
  5. In a small bowl combine the orange juice, hibiscus vinegar and olive oil and lightly drizzle this dressing over the salad at the last minute before serving.
