When I was in the USA I was introduced to sweet potato fries. To me it was so logical that the sweet potato fry should be served everywhere alongside normal fries. I fell well and truly in love. Although I had made basic sweet potato fries at home, I hadn’t yet tried this version and hadn’t quite developed my appreciation for the dish. These fries have the best flavour, and are the perfect accompaniment to any meal, or on their own as a little snack!

Ingredients

Quantity Ingredient
1 large sweet potato
1 tablespoon plant-based oil
1/4 teaspoon kelp
1/2 teaspoon salt
2 garlic cloves, crushed
1-2 jalapenos, sliced
vegan mayonnaise
lime wedges

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. Cut the sweet potato into squared long fry shapes (do not cut too small, as they will shrink in the oven) and place them in a bowl with the plant-based oil, kelp, salt, garlic and jalapeño. Toss together and then spread out evenly on the baking tray.
  3. Cook for 20–30 minutes or until the fries are nice and golden.
  4. Serve with vegan mayonnaise and lime wedges and enjoy!
