I can’t live without these crackers. They are super-healthy, very easy to make and make the perfect snack or little something to serve with dips and cheeses – and they look awesome too!

Ingredients

Quantity Ingredient
100g light buckwheat flour
55g ground almonds
1/2 teaspoon salt
10g dried wakame seaweed, powdered or in strips
1 sheet nori, roughly sliced
40g sesame seeds

Method

  1. Mix the flour, almonds, salt, wakame and nori in a food processor. Pulse until the seaweed is finely chopped.
  2. Transfer to a bowl and stir in the sesame seeds. Add 80–125 ml water and knead into a dough.
  3. Cover and let sit for 10 minutes.
  4. Preheat the oven to 180°C.
  5. Place the mixture between 2 sheets of baking paper. Roll it out very thinly with a rolling pin. Place on a baking tray and remove the top piece of baking paper.
  6. Cut into squares, rectangles or whatever shapes you like. I prick the crackers with a fork so they don’t puff up too much. Bake for 20–30 minutes.
  7. Remove the crackers from the oven, allow to cool and place in a jar or airtight container. Store for up to 2 weeks.
