These are the perfect tasty snacks to pop into kids’ lunchboxes or into your bag to nibble on while you are out (no getting tempted to buy junk food while you are on the run!). You can even add some protein powder to them and eat them as a little post-workout snack. They are delicious flavour bites that will definitely have you feeling great after eating them. They are a wonderful alternative to a chocolate truffle!

Ingredients

60g sunflower seeds
70g pepitas
30g chia seeds
30g shredded coconut
40g brazil nuts
40g almonds
30g hemp seeds
2 tablespoons bee pollen, (optional)
1 tablespoon cinnamon
40g cacao powder
1 scoop plant-based protein powder, (optional)
270g medjool dates, pitted
60ml coconut oil
1 teaspoon vanilla extract
80ml rice malt syrup
desiccated coconut, for rolling

Method

  1. Place the sunflower seeds, pepitas, chia seeds and shredded coconut into a processor or blender and pulse until a fine meal is formed. Throw in the Brazil nuts and almonds and pulse once or twice until they are crushed but not powdered (see note).
  2. Transfer to a mixing bowl and add the hemp seeds, bee pollen, cinnamon, cacao and protein powder, if using.
  3. In the now empty processor or blender, place the dates, coconut oil, vanilla and rice malt syrup and blend until smooth.
  4. Place the liquid ingredients in the bowl with the dry ingredients and combine – you may need to get hands on and really mush the ingredients together if mixing with a spoon is not doing the trick ( just make sure you wash your hands first!). Add a tablespoon of water if the mixture is too dry.
  5. Next take about a tablespoon of mixture at a time and roll it into 2.5 cm balls. Roll the balls in the desiccated coconut and place them in an airtight container in the freezer or refrigerator. These guys will keep for up to 2 weeks in the refrigerator, and a couple of months in the freezer.

Note:

  • If you want a softer truffle, pulse the ingredients until everything is a fine meal.
