These cookies are little pockets of deliciousness. I love to make them for any health food sceptic and any cookie lover. They are packed to the brim with antioxidants thanks to the cacao, and they are also grain- and nut-free, so suitable for many allergy sufferers!

Ingredients

125g sunflower seeds
60g black chia seeds
2 tablespoons cacao powder
30g cacao nibs
75g dark chocolate, chopped
2 tablespoons maple syrup
60ml flaxseed oil
1 teaspoon vanilla extract
1 tablespoon lucuma
1/4 teaspoon baking powder
2 tablespoons coconut cream
pinch salt

Method

  1. Place the sunflower and chia seeds in a blender or food processor and blitz until a powder is formed. Transfer to a bowl and mix in the rest of the ingredients.
  2. Preheat the oven to 180°C and line 1–2 baking trays with baking paper.
  3. Form 18 even-sized balls, place them on the baking tray and press each ball down slightly. Bake for 15 minutes.
  4. Remove from the oven, cool on the tray for 10 minutes, then eat! Store in an airtight container in the refrigerator for up to 1 week.
