This is another brilliant idea from the man at the cheese stall at Ballarò market in Palermo and it makes a lovely quick lunch or snack if you already have the sfincione sauce.

Ingredients

Quantity Ingredient
1 Sicilian pizza, sfincione sauce
sourdough bread
ricotta
pinch dried oregano

Method

  1. Instead of making the dough for a pizza, take a piece of sourdough bread and smear it with a thick layer of ricotta. Spread over a generous spoonful of sfincione sauce and scatter over a pinch of dried oregano. Cook for 10–15 minutes at 180°C or until lightly browned.
