For the filling

150g cooked and squeezed-out spinach
2 tablespoons extra-virgin olive oil
1 garlic clove, peeled and lightly crushed
salt
freshly ground black pepper
120g mozzarella, roughly chopped
50g parmesan, finely grated
1/4 teaspoon ground nutmeg, to taste

Method

  1. Sauté the cooked spinach in the oil with the garlic and seasoning for a few minutes. Remove from the heat, discard the garlic and finely chop the spinach. Put into a bowl and, when cool, add the remaining ingredients and stir to combine. Fill and cook your arancine.
