Winter tomato sauce

This sauce contains no fresh tomatoes but relies on the knowledge of the Italian growers to pick and preserve their tomatoes when they are perfectly ripe. Always buy an Italian brand if you can and choose whole plum tomatoes over chopped as otherwise the cans contain too much juice.

Ingredients

Quantity Ingredient
6 tablespoons extra-virgin olive oil
1 red onion, finely chopped
1 garlic clove, lightly crushed
2 x 400g canned whole italian plum tomatoes
1 teaspoon sugar
1 teaspoon salt
good pinch freshly ground black pepper
550g long or short pasta, to serve

Method

  1. Heat half the oil in a frying pan and gently fry the onion and garlic over a medium to low heat for 7–10 minutes, until softened. Add the tomatoes, sugar and seasoning, and cook over a medium heat for a further 30 minutes, using a potato masher or fork to break up the tomatoes. Taste and adjust the salt and sugar if necessary, before mixing in with your chosen pasta.
