Fried courgettes with mint and vinegar

Scapece is from the Spanish word escabeche, left over from the days of Spanish occupation in the area. It means ‘dressed with vinegar’. For a lower-fat version of this recipe try steaming the courgettes (zucchini) instead of frying them.

Ingredients

Quantity Ingredient
4 courgettes (zucchini)
3 tablespoons extra-virgin olive oil
2 large garlic cloves, lightly crushed
salt and freshly ground black pepper
1-2 tablespoons white wine vinegar
12 mint leaves

Method

  1. Slice the courgettes into 1 cm rounds. Heat the oil in a large frying pan and fry the courgettes with the garlic, seasoning the rounds on both sides and cooking until golden brown (if the garlic browns too much discard it). Using a slotted spoon, remove the courgette rounds and lay them on a plate. Drizzle with the vinegar and taste for seasoning. Tear the mint leaves, scattering them over the courgettes. Serve immediately or allow to cool to room temperature before serving.
