Italians prefer beans to be cooked until soft rather than squeaky and crisp. I have got used to this now and enjoy their flavour more than ever. Any type of green bean works for this recipe.

Ingredients

Quantity Ingredient
1/2 white or red onion
300g runner, flat or green beans
2 tablespoons extra-virgin olive oil
2 teaspoons white wine vinegar
salt and freshly ground black pepper

Method

  1. Slice the onion in half and then into thin semi-circles. Soak in a bowl of cold water for 10 minutes to remove some of their strength. Cook the beans in salted water for about 10 minutes, or until tender. Drain and then toss with the onion, olive oil and vinegar. Season to taste and serve at room temperature.
