Sticky nutmeg and date palmiers

French-style patisserie will forever be known for being delicious, beautiful, and crafted by masters. These palmiers (or pig’s ears as they are often called) are so easy to make with a simple roll-in technique. Most major brands of prepared puff pastry are made with oil instead of butter, but always check the ingredients before purchasing. Choose a variety that is pre-rolled to save time.

Ingredients

Quantity Ingredient
1 sheet shop-bought puff pastry (ensure dairy free)
1 tablespoon caster sugar
1/2 teaspoon grated nutmeg
4 stoned dates
1 tablespoon soya milk, to glaze

Method

  1. Preheat the oven to 220°C.
  2. Flatten the pastry sheet on a large board and scatter with the sugar. Grate over the nutmeg and smooth onto the pastry.
  3. Chop the dates into small pieces and scatter over the pastry.
  4. Fold each long side over to meet in the centre, then fold over once more to meet in the centre again.
  5. Using a sharp knife, cut diagonal slices, approximately 2cm thick. Arrange cut-side down onto a baking tray, allowing for some spreading.
  6. Brush over the soya milk and bake for 10 minutes until golden brown.
