Refreshing and cooling, this simple relish is best served with my Chickpea, apricot and maple-pan tagine.

Ingredients

Quantity Ingredient
1 pomegranate
10cm piece of cucumber
5-6 fresh mint leaves, finely chopped

Method

  1. To make pomegranate seed removal easy, massage the skin of the fruit before slicing it in half, then firmly tapping it into a bowl.
  2. Slice the pomegranate in half and tap out the juicy seeds.
  3. Chop the cucumber into small chunks. Add it to the pomegranate along with the mint and stir to combine.
