Caramelized fig and pistachio salad

Sweet, caramelized figs, salty sundried tomatoes, and earthy pistachio nuts make this impressive salad. Serve while the figs are warm for an elegant dish.

Ingredients

Quantity Ingredient
1 tablespoon fig jam
4 fresh figs, halved
1 generous handful lamb’s lettuce
1 generous handful watercress
2 sundried tomatoes in oil
1 tablespoon shelled pistachio nuts
drizzle good-quality extra virgin olive oil

Method

  1. Heat a griddle pan over a medium heat. Brush a little fig jam over the cut half of each fig and carefully place cut-side down onto the griddle pan for 2 minutes, then remove from the heat.
  2. In the meantime, arrange the lamb’s lettuce and watercress on a serving plate.
  3. Shake off any excess oil from the sundried tomatoes and roughly slice. Scatter onto the leaves along with the pistachios.
  4. Use tongs to place the caramelized figs onto the bed of salad and drizzle with oil just before serving.
