Everyone will love these simple fritters as they are bursting with the fresh flavours of pea and mint and are ready in under 10 minutes.

Ingredients

Quantity Ingredient
6 tablespoons sunflower oil

For the fritters

Quantity Ingredient
120g plain flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon dried mixed herbs
6 tablespoons peas (defrosted if frozen)
6 fresh mint leaves, finely chopped

Method

  1. Heat the oil in a frying pan over a medium heat while you make the fritter batter.
  2. Mix the flour, baking powder, salt, and mixed herbs in a bowl, then stir through the peas and mint.
  3. Pour in 100ml cold water and stir through to form a paste. Add tablespoon-sized amounts of the batter to the hot pan and cook for 2–3 minutes on each side. Serve hot.
