Yummy beef patties and wedges

As I explained before, with many of my recipes I like to hide the vegetables – not necessarily so the kids don’t know they are eating them, but so the meal is a kind of all-in-one dish – no mucking around with lots of different things on the plate. These patties are full of carrots and zucchini.

6 burger buns
good-quality whole egg mayonnaise, or tomato sauce
baby cos lettuce leaves
1 avocado, thinly sliced
2 firm, ripe tomatoes, thinly sliced

800g medium-large baking potatoes
1 1/2 tablespoons olive oil
1 teaspoon sea salt

2 medium carrots, peeled and finely grated
2 zucchinis, finely grated, about 400 g in total
600g minced beef
finely grated zest of 1 lemon
2 teaspoons wholegrain mustard
1 egg
75g panko breadcrumbs
1 tablespoon finely chopped flat-leaf parsley
1-2 tablespoons olive oil


  1. If you are making the red onion relish, prepare it now so it has time to cool.
  2. For the wedges, preheat the oven to 220°C/200°C fan-forced and line two baking trays with baking paper. Cut the potatoes into quite thin wedges and divide them between the trays. Drizzle the potatoes with the oil, season with the salt and toss to combine. Bake for 35–40 minutes, shaking the tray once, until golden and cooked through.
  3. Meanwhile, for the patties, using a clean tea towel or clean hands, squeeze out any excess liquid from the carrot and zucchini. Put them in a large bowl with the remaining patty ingredients, except the oil, and season with salt and pepper. Using your hands, thoroughly combine the mix, then form it into eight patties about 2 cm thick. Chill in the refrigerator for about 20 minutes, if you have time.
  4. Heat 1–2 tablespoons of olive oil in a large frying pan over a medium heat. Cook the patties for 5–6 minutes on each side until golden and cooked through.
  5. Just before serving, cut the burger buns in half, place them on a baking tray and warm them in the oven for 3–4 minutes.
  6. Spread a little mayonnaise or tomato sauce on the base of each bun, then top with your choice of accompaniments and a patty. Pop on the bun lids and serve. Alternatively, place all the accompaniments on a platter and let everyone make up their own burgers.


  • You can choose to serve just the patties in the buns, or add some red onion relish, a few slices of avocado, a crisp lettuce leaf and some tomato.
