Fleur de sel chocolate peanut butter cups with popping candy

You need a silicone cupcake tray for this recipe. This way you can ‘paint’ the chocolate inside, then peel off the insides.

Ingredients

200g vegan dark chocolate, broken into pieces
2 tablespoons vegetable shortening, such as Trex
200g smooth peanut butter
300g icing sugar
3 tablespoons virgin coconut oil
1 teaspoon pure vanilla extract
1 teaspoon fleur de sel or other good-quality sea salt
75g popping candy

Method

  1. Put the chocolate and shortening in a bowl and melt in the microwave for 30 seconds. Take it out, give it a stir and then microwave for another 30 seconds. If it needs a little more time, stick it in for another 30 seconds. Do not do it for longer bursts or it will ruin (or ‘seize’) the chocolate. Set aside some of the mixture, to cover the tops.
  2. Then with a clean, dry pastry brush, paint the insides of a silicone cupcake tray with the melted chocolate. Paint it quite thickly, leaving it to dry, then paint a second layer. (You want it fairly thick so that you can release it from the silicone without it breaking.) Put it in the fridge to set.
  3. Combine the peanut butter, icing sugar, coconut oil, vanilla and salt in a medium saucepan. Heat gently over a low heat until melted, then whip together with a whisk or rubber spatula until smooth. You don’t want it too hot.
  4. Remove the chocolate-lined silicone tray from the fridge and scoop 1 tablespoon of the peanut butter mixture into each hole to reach just below the top. Then smooth it over. Leave to chill in the fridge while you prepare the next stage.
  5. Heat the reserved chocolate in a bowl set over a pan of simmering water, or give it 15 seconds in the microwave. Then add the popping candy. Paint or spoon the mixture carefully over the top of your peanut butter cups. Chill once more in the fridge for about 10–15 minutes or until set.
  6. Remove the tray from the fridge and, using your thumbnail, release each peanut butter cup round the sides from the silicone. Gently pull away the silicone and push up from the bottom to remove each cup.
