Ingredients

Quantity Ingredient
1 fresh coconut
2 fresh red chillies, deseeded and very finely chopped
2 limes, juiced
handful coriander leaves
sea salt

Method

  1. Open the coconut, draining the milk into a glass. Peel off the brown skin. Whack the milk and flesh in a Vitamix or powerful food processor. Add the chillies, lime juice, coriander and salt to taste and process until finely minced.
